Undhiyu is a traditional Gujarati mixed vegetable dish, slow-cooked with aromatic spices and a blend of seasonal vegetables like green peas, potatoes, and more. Flavored with cumin, turmeric, coriander, garam masala, and a splash of lemon juice, it’s a wholesome, vibrant, and comforting dish. Garnished with fresh coriander, Undhiyu is perfect with puri or rice.

  1. Heat oil in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add turmeric powder, coriander powder, and salt, and stir well.
  4. Add all the diced vegetables and green peas to the pan, and mix well.
  5. Cover the pan and cook for about 3-4 minutes, stirring occasionally until the vegetables are tender.
  6. Add garam masala and lemon juice, and mix well.
  7. Garnish with fresh coriander leaves before serving.
